I've been making and perfecting the paleo banana muffin for years. Finally, my family has approved of this recipe.
Here's what you'll need:
1/2 cup coconut oil or butter, melted
1/2 cup coconut flour
1 teaspoon of baking soda
1 teaspoon of vanilla
1 teaspoon cinnamon
1/4 teaspoon cardamom
Here's what to do:
Heat oven to 350.
Line muffin tin with muffin paper.
Mix all ingredients in a Kitchen Aide Mixer or with a hand mixer.
Fill muffin paper 3/4 of the way full.
Bake for 15 minutes or until knife comes out clean.
Serve with butter.
