My children love, love, love chicken fingers. After hundreds of different trials and errors, we came up with a recipe that everyone likes.
What you'll need:
3 pounds chicken tenders
4 eggs scrambled
1/8 -1/4 cup coconut oil, lard or duck fat
1/4 cup coconut flour
1/4 cup shredded coconut
1 teaspoon salt
1/4 teaspoon pepper
1/2 teaspoon mustard powder
1/4 teaspoon poultry seasoning
What to do:
In a large skillet heat the oil on medium high heat.
Mix flour, coconut, salt, pepper, mustard and poultry seasoning together in a bowl.
Dredge the chicken in the egg.
Dip and lightly coat the chicken in the coconut flour mixture.
Fry the chicken tenders on each side until golden brown.
Serve with honey mustard sauce. Recipe: Mix raw honey and yellow mustard together to taste.
