Here's what you'll need:
1 table spoon lard or coconut oil
1 onion peeled and diced
1 clove of garlic peeled and minced
2 cups of sprouted lentils
2 cups of chicken broth, vegetable broth or water
4 carrots cut into rounds
extra virgin olive oil
salt and pepper to taste
Here's what to do:
In a medium soup pot bring stock to a boil, add lentils Turn down heat low, cover and cook for 30 minutes.
In a medium saute pan heat fat on medium heat. Saute carrots for 4 minutes, add onions and cook for 3 minutes, add garlic and cook until fragrant.
Add lentils to vegetables in the saute pan and stir.
Add salt and pepper to taste.
Serve with a good drizzle of extra virgin olive oil
