This meatloaf comes to you after 15 years of perfection. I've made every meatloaf recipe known to man and the one here is my own recipe and, I kid you not, it is the best!
Here's what you'll need: 2-3 pounds grass fed ground beef (could also add pork and or veal) 1/2 pound ground beef heart and/or liver (optional) 1 onion finely chopped in the food processor 1 cup porcini mushrooms finely chopped in the food processor 1 cup soaked, left over oatmeal (optional) 1/2 teaspoon dried chile flakes 1 teaspoon dried thyme 1 teaspoon celery seed 1 teaspoon salt 1 teaspoon Herbamare or sea salt 1 eggs 1 tablespoon fish sauce 3 tablespoons Worcestershire sauce 1 small can tomato paste 4 or 5 slices of bacon 1/2 cup lard Here's what to do: Preheat the oven to 350 degrees. Put the tomato paste, bacon and lard aside. Mix all the other ingredients together with your hands. Put the meatloaf in a 9 X 13 glass baking dish. Top the meatloaf with the tomato paste. Put the bacon over the paste. Divide the lard into four and place around the meatloaf. Cover and bake for 1 hour to 1 1/2 hours. Be in health. |
