What you'll need:
1 ham hock
2 bunches of spinach washed and trimmed
1 10 oz bag of sprouted green lentils
1 onion peeled and diced
3 cloves of garlic peeled and minced
2 table spoons of lard
2 cups of chicken broth
What to do:
In a large stock pot sauté onions and garlic in lard over medium heat for about 3-4 minutes.
Add ham hock and cover with water.
Heat on high to a boil then turn down to simmer.
Simmer for 30 minutes then take out the ham hock and take off all the meat.
Put the meat back in the soup pot.
Add lentils and cook according to package directions.
