Fried Potatoes, Peppers & Onions
What you'll need:
2-4 Yukon Gold Potatoes sliced into rounds
1/2 green bell pepper seeds removed, chopped
1/2 red bell pepper seeds removed, chopped
1/2 onion peeled and sliced
1 tablespoon coconut oil
What to do:
Heat oil in a large skillet.
Add onions and cook for 1 minute.
Add potatoes and cook until brown.
Add peppers and cook until brown.
Season with salt and pepper.
