Here's what you'll need:
3 pound of chicken thighs
salt & pepper
3 leeks whites and pale yellow cut into slices
1 Yukon Gold and 1 sweet potato peeled and cut into cubes
1 table spoon coconut oil
Here's what to do:
Preheat oven to 350 degrees.
Spread leeks onto a baking sheet.
Toss potatoes with coconut oil and a sprinkle of salt and pepper
Salt, pepper and poultry season chicken thighs on both sides.
Place chicken and potatoes on top of leeks.
Bake for 30-40 minutes or until meat thermometer reads 165 degrees.
