My family loves to order out for Chinese Food. Beef and broccoli is one of their all-time favorites. I love to have a night off from cooking, but I cringe to think of the ingredients used in Chinese Take-Out.
Now, being Italian, cooking Chinese does not come easy for me -at all. In fact, I can't tell you how many Chinese dishes I've tried and failed at. Finally, after years of trying, I've made the best beef and broccoli ever. Here's what you'll need: 1 pound grass fed, flat iron or flank steak, thinly sliced against the grain 1 cup fermented soy sauce 1/2 cup orange juice or 1 freshly squeezed orange 1 teaspoon fish sauce 1 teaspoon garlic powder or 1-2 garlic cloves peeled and crushed 1 teaspoon ginger powder 1/4 teaspoon red pepper flakes 2-3 tablespoons grade B maple syrup or coconut sugar 3 tablespoons arrowroot 3 crowns broccoli, cut into pieces 2 cups sliced mushrooms 2 tablespoons coconut oil or lard 2 tablespoons sesame oil Good veggie alternatives and/or additions are: spring onions, bell peppers, asparagus and/or carrots. I think any veggies would work. Chicken would work too. Here's what to do: In a medium glass bowl mix together soy sauce, orange juice, fish sauce, garlic, ginger, red pepper flakes, arrowroot and syrup. Combine steak and soy sauce mixture and refrigerate 30 minutes to overnight. One hour before you're ready to cook, take the stake out and bring to room temperature. Steam broccoli for 4 minutes. In a large skillet heat oil on medium high heat add beef, in batches as to not over crowd, and cook until brown. When cooking last batch add mushroom and cook for 2 minutes, then add broccoli and cook for 2 more minutes. Serve over Basmati Rice or cauliflower rice. Drizzle with sesame oil and a sprinkle of sesame seeds (optional). Be in health. Every weekend we make my grandmother's recipe for meatballs and sauce. First we make the sauce, then we pan fry the meatballs in lard using 1 pound each of ground beef, lamb, and pork all from our local farmer. The meatballs are browned quickly on the outside and left uncooked in the middle. As each batch browns we scoop them out and add them to the hot pot of sauce to finish cooking all the way through. My grandmother's sauce recipe: What you'll need: 1-2 pounds of pork neck bones or other meaty bones of your choice (optional) 3 tablespoons of lard or fat of your choice 4 cloves of garlic peeled and sliced 1 onion peeled and cut into quarters 2 large cans of tomato puree 1 large can of diced tomatoes 1 jar of tomato paste 2 tablespoons of dried Italian herbs 1 teaspoon of salt 2 bay leaves 1 tablespoon of dried oregano 5 -7 leaves of fresh basil What to do: In a large sauce pan on medium heat, saute meat bones in lard until brown, add onions and cook for 2 minutes or until just soft, add garlic and cook until fragrant. Add paste, Italian seasoning, oregano and salt. Stir, scraping up the brown bits on the bottom of the pan. Add the tomato pure, diced tomatoes and bay leaves. Add six cups of water. Yes, the sauce will look watery. Bring sauce to a boil then turn down the heat and simmer while you prepare the meatball mixture. After the meatballs are brown, drop them in the sauce to finish cooking. After all the meatballs are in the sauce, turn the sauce off. Adjust seasoning and add salt to taste.
Note, if the sauce looks to water, take the meatballs out and continue to simmer the sauce until desired thickness. Be in health. Growing up, my parent's marriage was a disaster. I'll spare you the details.

Help Meet One of our primary roles as a wife is to be a help meet. A help meet is a helper, one who balances her husband - a counterpart who is suitable and complementary for him. A help meet is a companion to her husband, she works along side of her husband. We assists our husbands and bring out the best in him. Our primary responsibility is to help and be a companion to our husband. Now, does this take 24 hours a day? No. Does this mean we don't have our own lives, jobs, careers, hobbies? No. Does this mean he doesn't help us? No. Practically, ask him "how can I help?", or "is there anything I can do to help you?" Think of a pilot and co-pilot of an airplane. The co-pilot helps the pilot. Your husband trusts in you because you help him be his best in every category of life. You are the only person on the planet who can do this. He confides in you because you have his best interest at heart; physically, emotionally and mentally. If our husband is having a hard time, we help him. We lift him up. We listen. We care. We help him by encouraging him with God's Word. The greatest way we can be ready to help our husbands is to be strong on The Word of God. As wives, we do what will strengthen and build him up according to who he is in Christ. We are faithful in our care and regard for his heart and life. We work along side and assist our husbands to bring out the best in them. Wives have a very important role in helping their husbands be their best. I encourage you to be an expert in helping your husband realize his full potential in body, soul and spirit. Take care of him, he is your best friend and you can help him be his best. A help meet is a helper, a companion to her husband who works along side him to bring out the best in him by assistance. You are the only person in the world who can fulfill this role. In fact, the world continually beats up your husband and when he comes home you are the only one who can build him up. |
