The Italian Easter Menu is very long. Here's one of many dishes that we make and love. It's fast easy and high in protein.
What you'll need: On box of GF ziti cooked al dente 3 cups of sauce (Use your judgment here. Use just enough sauce to cover the macaroni) 1/4-1/2 cup Grated Parmesan cheese Six eggs scrambled salt and pepper to taste red pepper flakes What to do: In a large pot bring the sauce to a low boil. Add 1/4 - 1/2 cup cheese to the eggs and salt and pepper to taste. Stir Add the macaroni to the hot tomato sauce. Stir and bring back to a low boil. Add the egg mixture to the hot macaroni and stir. Let the hot macaroni cook the eggs for about 5 minutes. Watching and adjusting heat so it does not burn or stick. Remove the macaroni and eggs from the heat and let sit for 5 minutes. Serve with Parmesan Cheese and red pepper flakes to taste. Be in health. My children love, love, love chicken fingers. After hundreds of different trials and errors, we came up with a recipe that everyone likes.
What you'll need: 3 pounds chicken tenders 4 eggs scrambled 1/8 -1/4 cup coconut oil, lard or duck fat 1/4 cup coconut flour 1/4 cup shredded coconut 1 teaspoon salt 1/4 teaspoon pepper 1/2 teaspoon mustard powder 1/4 teaspoon poultry seasoning What to do: In a large skillet heat the oil on medium high heat. Mix flour, coconut, salt, pepper, mustard and poultry seasoning together in a bowl. Dredge the chicken in the egg. Dip and lightly coat the chicken in the coconut flour mixture. Fry the chicken tenders on each side until golden brown. Serve with honey mustard sauce. Recipe: Mix raw honey and yellow mustard together to taste. Be in health. Our three girls are 9, 11 and 13. Currently, I spend all afternoon driving them around to different activities. At 6PM everyone is finally home and starving. Here's what you'll need: 1 oxtail (you could easily substitute stew meat here) 2 tablespoons lard 4 sweet potatoes peeled and cut into 1" cubes 4 carrots cut into 1" cubes 1 bag of frozen peas 1 can of diced tomatoes 1- 2 cups of sliced mushrooms 1 onion peeled and chopped 1 small jar of tomato paste 1/2 cup red wine 3 cloves of garlic peeled and chopped 2 bay leaf 2 teaspoons of fish sauce salt & pepper Here's what to do: Preheat the oven to 350 degrees In the morning salt and pepper the oxtail. In a large dutch oven melt lard on medium high heat. Add oxtail and saute until brown on each side. Add onion and saute for 2 minutes. Add garlic and saute until fragrant. Add red wine to deglaze the pan. Add fish sauce, tomatoes, paste, mushrooms, sweet potatoes, bay leaf and carrots. Cover with a lid and place in the oven for 2-3 hours. When ready to serve, stir in green peas. Be in health. |
